Until last July in Cuba had been created about a dozen non-agricultural Cooperatives (CNA), seven of which are in Santiago de Cuba. Such is the case of the restaurant Zunzún, first CNA associated with tourism. 

Few months ago the restaurant Zunzún was under the management of Palmares, until their 11 workers decided to step up and take over the business, which currently works almost exclusively with tour packages.

Argelio Enrique Oliú, president of the cooperative, commented that in the early months had many obstacles and many new things to learn. At first tourist agencies refused to sign contracts with the restaurant and it made them through difficult times. They had to face for the first time to the administration of a company, which for most was uncharted territory.

Another unfavorable aspect that still remains is that the group started with insufficient capital and hiring local is very high (2794 CUC monthly) and the subject have tried to argue with the managers of tourism without having received any response so far. Although the Central Bank of Cuba provides credit opportunities Zunzún partners have decided to wait, because they do not want additional debt.

Difficulties in obtaining raw materials have not slowed the diversification of economic offerts that the restaurant presents; they have managed to acquire supplements in ideal markets, others in the agricultural market, and others (such as the oil) with companies in lower prices, and some meats provided by the meat Products Company of Santiago (CADEYSA).

Now Zunzún have made agreements with agencies like Cubanacan, Havanatur and Cubatur sending tour groups. Moreover have joined Transtur officials interested in his services, because they have a financial offer for staff and tourist guides accompanying groups, something that did not exist. 

"In light of a year, we believe we can afford all the equipment and furniture that we bought, would only lease, taxes and buying goods. This can be addressed by keeping the premise that large volumes of sales get more profits, "Beltran said.
