Last weekend, The Waterfront Restaurant of The Hyatt Regency in Port-of-Spain played host to the Cuban Food Festival and what a gastronomic delight it was. Playing host to the media was Hyatt’s Neemah Persad-Celestine, who introduced diners to the creations of visiting Cuban chef Santiago Goutierrez Lezcano and Hyatt Executive Chef Fernando Franco. Guests were entertained by Cuban vocalist Fernandez de Bulnes and Cuban trio Son de Cuba. Also dining were Cuban artists Jose Fuster, Alicia Leal, Vincente Bonachea and Alberto Sautau. Though comprising just three courses, choices were wide and varied as far as the menu was concerned, each course comprising no fewer than six selections, each an authentic Cuban delicacy. The appetisers included Habanera (salad with chicken, potatoes, pineapple, herbs and mayo dressing); Rice and Garbanzo Salad (rice, chick peas, tomato, cucumber, peppers and onion); and Fisherman’s Delight, consisting of seafood, tomato juice, lime and cilantro.

The entree included nine items, inclusive of Cerdo Asado a la Criolla (creole roasted pork leg, with an orange juice flavour); Viandas al Vapor (steamed vegetables, potato, carrots, pumpkin and onions); and, Aporreado de ternera a la Camagueyana (sheered beef, tomato, garlic, onion and spices). For dessert, the choices included Arroz con Leche; Flan de Coco al Caramelo; Cascos de Naranja con Queso and Torrejas en Almibar. At the end of it all, there was nary room for a swig of cappuccino.
